Butternut squash- it has a sweet, nutty taste similar to that of a pumpkin. It has yellow skin and orange fleshy pulp. When ripe, it turns increasingly deep orange, and becomes sweeter and richer. It is higher in carbs so should be regarded as a starchy vegetable. t can be baked and roasted and put into risotto/rice and salads and can also be pureed and made into soup.

High in beta carotene which is an anti inflammatory and helps to reduce damage caused by the sun.Pumpkin can be baked in muffins, bread, and pies. Can be blended into soups and roasted and baked and put in salads.
Sweet Potatoes- They have a yellowish or orange flesh and it’s thin skin is usually white, brown or yellow. It can be shaped like a round potato or can be longer with tapered ends. Sweet potatoes are high in anti oxidants and anti inflammatory and is low on the glycemic index.Sweet potato can be eaten right out of the oven or microwave or can be mashed into sweet potato pie.
