Chocolate Topped Macaroons

What you will need:

– 1 package (8 ounces.) packaged shredded unsweetened coconut flakes

– 3 large egg whites

– 1/4 cup erythritol (Stevia) or other sweetener in granulated form

– 2 teaspoons vanilla extract

– 4 ounces dark chocolate

Directions :
Preheat oven to 350 F. Line a baking sheet with parchment paper.
In a large bowl whisk together egg whites with sugar. Add vanilla and coconut stir till will combined.
Mold the batter into small golf sized balls.
Place on the baking sheet and bake until the tops become golden brown approximately… 15 mins.
Take them out to cool.
While they are baking melt the chocolate over low heat in a double boiler or you can even microwave it.
Dip the macaroons in the chocolate or drizzle on top.
Place in the refrigerator until chocolate is set and serve!
