I wanted to share two really great recipes with you today. We had made both of these for the start of the Summer Transformation Challenge. Everything except for the spices was bought organic. The rice/ground turkey recipe was heavily dented & the avocado dip was completely gone by the end of our festivities. Anyway, here they are:

Brown Rice with Ground Turkey

Cook 1/4 of a cup of brown rice in boiling water
Fry 4oz of ground turkey in a seperate frying pan
Season the ground turkey with paprika, ground onion, and ground garlic
When the rice is finished, mix rice and ground turkey in frying pan
Add 1/4 – 1/2 tablespoon of olive oil
Add tumeric, oregano, and more onion and garlic seasonings
Add 1 – 2 tablespoons of soy sauce
Mix everything together in frying pan and heat on low with lid covering for 2 min

Makes 1 healthy serving!

Spinach and Avocado Dip

Finely chop: 1 cup fresh spinach, 1 medium/large tomato

Mash 5 – 6 ripened avocados in a bowl

Add either minced or finely chopped onion to the bowl

Squeeze half a lemon into the bowl

Mix in the spinach and tomato to complete the dip

As for the dipping material… you can buy celery sticks, cucumbers, carrots, or peppers. Just wash them and chop into bite size pieces.

Makes about 4 – 5 days worth of dipping meals!
